These gooey, delicious samoa cookies are gluten, dairy and refined sugar free. If you’re anything like me and can’t resist a girl scout cookie, you will absolutely love these. The best part? they come together with only 5 simple ingredients. I’ve found these cookies taste the best when you take the extra time to cut out a center hole and shape them like the original samoas.

Ingredients

  • Fine almond flour

  • All natural maple syrup

  • Medjool dates

  • Unsweetened shredded coconut

  • Chocolate chips

Directions:

  • Evenly spread your coconut onto a parchment lined baking sheet and lightly roast at 225 until slightly golden

  • In a medium bowl mix together fine almond flour and all natural maple syrup (Somewhere in a 1:4 ratio of almond flour to syrup) until a sticky dough forms

  • Roll out your dough between parchment paper and cut into shapes if desired

  • Bake at 325 for 15 minutes or until desired level of crispiness is reached

  • Soak pitted dates in hot water for 10 minutes, then drain and blend to make a paste

  • Once everything has cooled, spread the date paste over the cookie, coat with the coconut flakes, and lastly drizzle with melted chocolate chips
